Show Some Love Romantic Meal

Creating a special dinner for just you and your significant other shouldn’t put extra stress on you as the cook. What’s the point in having a relaxing meal with your love if you’re too tired from preparing it that you can’t enjoy the meal or the time alone? The perfect romantic meal should be easy to prepare, but have an elegant tone. In this instance, presentation is just as important as taste.

Lemony Spinach Salad with Honey Sweetened Dressing
Shrimp Scampi Primavera (This main course is a bit garlicky, so be prepared when you’re honey leans in for a kiss and sneak in a sip of wine before you lock lips)
Cheesy Garlic Bread (Warm and delightfully buttery)
Chocolate Cheesecake for Lovers (This one says it all…cheesecake is the perfect lover dessert.)

Lemony Spinach Salad

Prep Time: 20 minutes

Ingredients:

2 tablespoons olive oil
1 tablespoon white vinegar
1 t lemon juice
1 1/2 tsp honey
1/2 tsp lemon zest
1/8 tsp salt
1/8 tsp pepper
4 cups fresh spinach, 5 oz
1 cup cherry tomatoes, quarters
3/4 cup sliced mushrooms, 2 oz
2 radishes, slices
1/4 cup chopped scallions
2 tsp honey roasted flavored sliced almonds

Instructions:

1. Whisk together olive oil, vinegar, lemon juice, honey lemon zest, salt and pepper.
2. Add spinach, tomatoes, mushrooms, radishes and scallions
3. Toss to coat
4. Sprinkle with almonds.

Shrimp Scampi Primavera

Ingredients:

8 oz. linguine pasta
1 lb. large shrimp, peeled, deveined
1/2 tsp salt
3 tsp olive oil
4 cloves of garlic minced
1/2 tsp crushed red pepper flakes
6 oz sugar snap peas (1 1/2 cups)
1/3 cup white wine or chicken broth
3 tsp butter
3 tsp chopped fresh parsley
2 tablespoons lemon juice
1/8 tsp grated lemon zest

Instructions:

1. Cook linguine according to package directions
2. Drain
3. Sprinkle shrimp with 1/4 tsp salt (reserve)
4. In a nonstick skillet, heat 2 tablespoons of oil over medium-high heat
5. Add garlic and pepper flakes
6. Cook 1 minute
7. Add reserved shrimp
8. Cook, turning once until pink and opaque
9. With a slotted spoon remove shrimp from skillet
10. In the same skillet, heat remaining oil
11. Add snap peas and remaining salt
12. Cook until peas are just tender (4 minutes)
13. Add wine
14. Cook a minute more
15. Stir in butter until melted
16. Add parsley, lemon juice and reserved pasta and shrimp
17. Cook tossing until heated through (3 minutes)
18. Sprinkle with zest

Cheesy Garlic Bread

Ingredients:

1/4 cup butter melted
2 tablespoons grated Parmesan cheese
2 cloves garlic
1/4 tsp. pepper
1 long loaf French bread halved lengthwise
2 oz provolone cheese shredded
1 tablespoon chopped fresh parsley

Instructions:

1. Place bread on baking sheet 4" from heat
2. Preheat broiler
3. Combine butter, Parmesan, garlic and pepper
4. Brush over cut sides of bread
5. Place bread cut sides up on ungreased baking sheet
6. Sprinkle with provolone cheese
7. Broil until cheese is melted 3-5 minutes
8. Sprinkle with parsley

Chocolate Cheesecakes for Lovers

Ingredients:

2 pkg. (8 oz. each) cream cheese, softened
1/2 cup sugar
1/2 tsp. vanilla
2 eggs
4 squares semi-sweet baking chocolate, melted and slightly cooled
1 OREO Pie Crust (6 oz.)

Instructions:

1. Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended
2. Add eggs; mix until blended
3. Stir in melted chocolate
4. Pour into crust
5. Bake at 350°F for 40 minutes or until center is almost set
6. Cool
7. Refrigerate 3 hours or overnight
