Cheap Meal Idea

Eating well does not have to take a lot of money nor a lot of time. A cheap meal idea only means we shopped smart. The chicken mushroom pasta is a cheap meal idea that will have everyone begging for more. Not only is this meal inexpensive, but easy to prepare. Combine the chicken pasta with the Italian vegetable toss salad and you have a nutritious combination dinner.

The prep time is only 15 minutes and it takes only 15 minutes for cooking.

Chicken Mushroom Pasta

Ingredients:

*4 boneless skinless chicken breast fillets
*Salt and ground pepper
*7 tablespoon butter, divided
*4 cups sliced mushrooms white and wild
*2 cloves garlic, minced
*1 1/2 tsp balsamic vinegar
*Chopped fresh sage

Instructions:

1. Season chicken with salt and pepper
2. Melt 1 tbsp butter in a large skillet
3. Add chicken and cook over medium heat for bout 10 minutes or until browned on both sides and cooked through
4. Transfer to a dish and keep warm
5. Add mushrooms to skillet and cook
6. Stir frequently for about 5 minutes
7. Set aside
8. Melt remaining butter in a medium skillet over medium heat
9. Cook for 1-2 minutes
10. Remove from heat and stir in garlic and vinegar
11. Add mushrooms to skillet
12. Pour mixture over chicken
13. Sprinkle with sage

Italian Vegetable Salad

Ingredients:

*2 cups broccoli flowerets
*1 cup fresh mushrooms
*1 cup pitted ripe olives
*16 oz can rinsed chopped artichoke hearts
*1/2 cup chopped green onions
*2/3 cup Italian dressing
*1 medium avocado, sliced
*1 medium tomato, chopped

Instructions:

1. Combine all ingredients together in large bowl
2. Toss with Italian dressing
3. Cover and chill for several hours

Yield: 6 servings

This salad is nutritious and makes a great side dish for several chicken or beef main course meals.
